Ingredients:
1 box Gluten-Free Lucky Penne
1 small head radicchio, sliced
6 slices bacon, chopped
1/4 cup balsamic vinegar
2 tablespoons olive oil
Salt and pepper to taste
Directions:
Cook pasta according to package instructions until al dente.
In a large pan, cook bacon until crispy. Remove bacon and set aside. In the same pan, sauté radicchio until softened.
Add balsamic vinegar to the pan and reduce slightly.
Toss the cooked pasta with the radicchio, bacon, and balsamic reduction. Season with salt and pepper.
