1 large beetroot, cooked and peeled
1 cup ricotta cheese
Salt and pepper to taste

Directions:
Cook pasta according to package instructions until al dente.
In a blender, blend cooked beetroot with ricotta until smooth.
Toss the cooked pasta with the beetroot ricotta sauce. Season with salt and pepper to taste.
