Ingredients:
1 box GOODLES Lucky Penne
1 head radicchio
1 small shallot
½ cup castelvetrano olives
3 oz. sundried tomatoes
1 can artichoke hearts
⅓ cup fresh parsley
Parmesan
Salt & pepper
For the dressing:
3 anchovy filets, chopped
1 clove garlic
1 tbl dijon mustard
3 tbl red wine vinegar
3 tbl olive oil
½ lemon, juice
*whisk to combine or blend in a food processor
Directions:
Bring a large pot of salted water to a boil. Cook GOODLES’ Lucky Penne for 9-12 minutes until al dente.
While the pasta cooks, chop all salad ingredients and make the dressing. Combine all chopped salad ingredients into a large bowl.
Add the pasta and toss well. Season with a little salt and pepper. Mix in the dressing and continue to toss until well combined. Finish off with thin slices of fresh parmesan.
