Gluten-Free Jalapeño Popper Baked Mac & Cheese

Ingredients

2 boxes GOODLES GF Cheddy Mac

2 tbsp butter

1 minced jalapeno

1 cup milk

1 cup heavy cream

½ cup cream cheese

5 pieces of cooked and minced bacon

Salt & pepper to taste

½ cup shredded cheddar cheese

¼ cup GF breadcrumbs

Instructions

  • Begin by boiling the GOODLES mac & cheese for 6-8 minutes. Remove and strain once almost al dente. Drizzle with some oil and set aside.

  • In a pan melt 2 tbsp of butter and add the minced jalepeño. Saute for 1-2 minutes until fragrant. 

  • Next add the milk, heavy cream, and cream cheese. Gently simmer on low to medium heat until the cream cheese is melted. 

  • Shut off the heat and add the cheese packets and cooked bacon bits, stir to combine. Reserve some bacon bits for topping if desired. 

  • Season with salt & pepper and add the cooked noodles to the sauce. Place the mac into a small baking dish. Sprinkle the cheddar cheese and gf breadcrumbs on top. Add more jalapenos and bacon bits on top if desired.
