Lucky Penne Alla Norma

Ingredients:
1 large eggplant, chopped into 1 inch cubes
Salt, pepper, olive oil
2 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon chili flakes
14 oz crushed tomatoes
1/2 teaspoon dried oregano
1 box GOODLES Lucky Penne
1/2 cup freshly grated parmesan, plus more for garnish
about 15 leaves fresh basil
Instructions:
Preheat oven to 450.
Toss the eggplant with salt, pepper, and olive oil and add to a baking sheet. Bake for about 30 minutes, stirring once, until browned and reduced in size.
Meanwhile, bring a pot of water to a boil and cook the Lucky Penne according to package instructions. When the pasta is almost done, reserve 1/4 cup of the pasta cooking liquid. Strain the pasta and hold until ready to use.
Heat a heavy bottom skillet to medium heat with the olive oil and add the garlic, salt, and chili flakes. Cook about 3 minutes. Stir in the tomatoes and cook for 5 minutes.
Stir in the roasted eggplant and oregano. Stir in the cooked pasta and pasta cooking liquid. Stir in the parm. Simmer for 2 more minutes, then remove from heat. Stir in the fresh basil.
Serve with more parm!
