Ingredients:
1 box Gluten-Free Lucky Penne
1 pint cherry tomatoes
1/2 cup black olives, pitted and squashed
1 teaspoon red chili flakes
2 tablespoons olive oil
Salt to taste
Fresh basil leaves, for garnish
Directions:
Preheat your broiler. Toss cherry tomatoes in olive oil and salt, then spread on a baking sheet. Broil until blistered and just bursting, about 4-5 minutes.
Cook pasta according to package instructions until al dente.
In a large pan, warm olive oil over medium heat. Add broiled tomatoes, squashed olives, and chili flakes. Cook for 2-3 minutes, stirring gently.
Toss the cooked pasta with the tomato mixture. Serve garnished with fresh basil leaves.
